Ingredients:
1 lb Spaghetti
4 Eggs
1½ cups Grated Parmesan Cheese
8 slices Bacon, diced
8 Garlic Cloves, minced
Salt & Ground Black Pepper
¼ cup Chopped Parsley Leaves
Directions:
In a pot of salted boiling water, cook pasta according to package instructions. Reserve ½ cup water and drain well.
Whisk eggs and 1 cup Parmesan together in a bowl. Set aside.
Heat a skillet over medium heat. Add bacon, and cook for 6-8 minutes until brown and crispy. Reserve excess fat.
Mix in garlic for 1 minute until fragrant. Lower heat.
Stir in pasta and egg mixture. Gently toss pasta and bacon to combine. Season with salt and pepper.
Add reserved pasta water, 1 tbsp. at a time, until desired consistency is reached.
Garnish with parsley leaves, and top with remaining cheese.
