½ cup & 4 Tsp. Olive Oil
4 Pieces Boneless Salmon
Salt & Pepper, to taste
2 Tbsp Honey Mustard
3 tsp Chopped Thyme
⅔ cup Panko Bread Crumbs
2 Red Peppers, chopped
1 Red Onion, sliced
½ Cucumber, chopped
2 Tbsp Lemon Juice
2 Tbsp Vinegar
Directions:
- Preheat the oven to 400 degrees.
- Season with salmon on a baking sheet with salt and pepper.
- Combine the honey mustard and 1 teaspoon thyme in a small bowl.
- In another bowl combine the panko, 4 teaspoons oil, remaining thyme, salt, and pepper.
- Spread the mustard mixture on top of the salmon and top with bread crumbs.
- Roast the salmon for 12 minutes until it flakes with a fork.
- Meanwhile, sauté the peppers, onion, and cucumber in a skillet.
- Combine the lemon juice, vinegar, and olive oil in another bowl and season with salt and pepper.
- Toss with warm vegetables and serve alongside the crusted fish.
