White asparagus is white because it’s kept in the dirt, deprived of sunlight, and does not produce chlorophyll to make it green. This doesn’t take away from its delicious flavor or texture. While it is a little sweeter than regular asparagus, putting it in a savory recipe is still an option, like in this tart recipe.

1 Sheet of Puff Pastry
1-2 bunches White Asparagus
2 Tbsp Olive Oil
½ tsp Garlic Powder
1 Small Onion, minced
1 Egg, beaten
6 oz Ricotta Cheese
1 cup Parmesan, shredded
1 Tbsp Thyme
1 Tbsp Lemon Zest
¼ tsp Kosher Salt
¼ tsp White Pepper
1 cup Swiss Cheese, shredded
Directions:
- Preheat oven to 400 degrees and line baking sheet with aluminum foil.
- Heat olive oil in a large skillet and sauté asparagus, onion, and garlic powder for about 5 minutes.
- Once soft, remove of heat and set aside.
- In a large bowl, combine egg, ricotta, parmesan, thyme, lemon zest, salt, and pepper and toss well to combine all.
- Roll out pastry sheet on baking sheet, create a 1 inch border of dough around the edges, prick air holes in based with a fork, then bake for 15 minutes.
- Spread cheese mixture over pastry evenly then top will asparagus mixture.
- Sprinkle Swiss cheese on top then bake for 20-25 minutes or until pastry is golden brown and cheese is melted.
- Let cool for 5 minutes then cut and serve.
